Chocolate 'n' marmalade muffins are perfect for a sunny but cool morning

I love to bake on weekend mornings — I have the luxury of time both to prepare treats and to enjoy them with a cup of coffee. This past Saturday's chilly but sunny weather was perfect for baking. And something about the combination of chocolate and orange marmalade just seemed to strike my fancy...

Chocolate 'n' Marmalade Muffins

2/3 cup sugar
1/4 cup butter, softened
2 eggs
3/4 cup buttermilk
1/3 cup orange marmalade
1 cup flour
3/4 cup whole wheat flour
1/2 cup cocoa powder
1/2 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt

Preheat oven to 350 degrees. Line a 12-cup muffin tin with paper liners.

In a large mixing bowl, cream together the sugar and butter. Stir in the eggs, then stir in the buttermilk. Stir in the remaining ingredients until just combined.

Divide the batter among the prepared tins, and bake for 20 minutes until a toothpick inserted into the center of the muffins comes out clean. Let cool, then enjoy.

Makes 12 muffins.
