Kitchen Mailbox Coleslaw like Zingerman's

By Marge Biancke

Would you publish a recipe similar to Zingerman's cole slaw? Thanks.
-Susan Jordan

Keith Dragon shared the Zingerman's Roadhouse recipe with me. It makes enough for a party of over 150, so I have broken it down for home use. This version will be similar but not exactly what you get at the Roadhouse. Thank you, Keith for sharing your blue ribbon cole slaw recipe with us.

Coleslaw similar to Zingerman's

3/4 cup balsamic vinegar
2 teaspoon minced garlic
1/2 cup yellow mustard
1/2 cup mayonnaise
1/2 cup sugar
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup olive oil
1 1/2 teaspoon celery seed

chopped cabbage
thinly sliced celery

1. In a large bowl, food processor or blender combine the balsamic vinegar, minced garlic, yellow mustard, mayonnaise, sugar, salt and pepper. Whisk or pulse until well blended.
2. In a slow, steady stream add the olive oil while continuously whisking or with the motor of the processor running. Continue blending until the ingredients are emulsified. Add the celery seed and mix well.
3. Pour over chopped cabbage and celery and toss.
