I admit it. I've been buying all of my red tomatoes this summer from the Farmer's Market. I love Fried Green Tomatoes (August 15 dinnerFeed recipe) so much they don't have time to ripen on my backyard vines. I noticed Maverick Ranch Bacon was on sale through the month of August at Arbor Farms for $5.99 (12 ounces) and all I could think of was BLTs. And not just any BLT, I'm thinking a fried green tomato BLT. And switch that lettuce to arugula-it's what I have in the fridge.

I adore the flavor of uncured Applewood Smoked Maverick Ranch bacon. Maverick Ranch animals are raised without pesticides, antibiotics or growth hormones. One taste of this bacon and you're hooked. One package of bacon should get me through seven or eight sandwiches, give or take a slice.

A couple of weeks back, I published a blog on fried green tomatoes (see Aug. 15 dinnerFeed.) My palate is not being selfish, here. More of these types of recipes were requested by some of you so I'm indulging us both with another yummy favorite.

Yield: 3-4 sandwiches (depending on tomato and bread size) Cost: apx. $7.50 Time: Assembly & fry time for bacon and tomatoes: apx. 30 minutes Sandwich assembly time: 5 minutes

Ingredients:

6 slices uncooked bacon 1 recipe for fried green tomatoes (see August 14 dinnerFeed for recipe) 6-8 slices bread, your choice of bread (toasting optional) 2-3 tablespoons Hellman's mayonnaise 1-2 cups arugula

Directions:

1. In a large skillet, fry bacon leaving bacon drippings in the pan. When bacon is cool enough to handle, cut in half. Prepare recipe for fried green tomatoes, frying tomatoes in drippings instead of oil. 2. Spread mayonaisse on one side of each bread slice. 3. Divide and layer bacon halves, arugula and fried green tomato on half of bread slices. Top with remaining bread and serve.

Jennifer - I'm so happy to hear that you have green tomatoes off season. I would like to do this recipe year round but have in the past not been able to find green tomatoes off season. Please let me know where you are able to find green tomatoes during the winter season. Thank you!

Jo: I've baked "fried"chicken in the oven with success so I would think you could follow this recipe and bake them on an oiled cooking sheet (400) about 9-13 minutes on each side until golden brown. I will have to try this and google it! Let me know if it works for you. Peggy

My tomatoes aren't ripening very fast this year...this looks great, but I've been trying to cook healthy. Do you think this would work baked? Thanks much.

This sounds good - still prefer the fresh, red tomatoes for this time of year, but I'd love this in colder weather!

Oh, Peggy this looks great. Fried green tomatoe BLT --never have tried that so...must do so since I love eating fried green tomatoes and regular BLTs so this will be a great change!
