Very Veggie, Very Fast Pizza

This is my idea of fast food — and it's faster than if I'd ordered a pizza, faster than if I'd cruised through a drive-through — the fastest of the fast foods, indeed. But what makes tonight's dinner the real winner is it's less expensive, healthier, and, to my palate, far tastier than other fast food options — and the main ingredients came from my freezer.

Frozen pizzas never have enough "stuff" on them for me, so I always "enhance" with other goodies. Today, I used a 17-ounce vegetarian frozen pizza from Trader Joe's enhanced with thawed frozen brocolli florets.

In the past, I've enjoyed Amy's frozen pizzas — especially the spinach variety, which I enhance with additional spinach and cheese; I always have garlic and some sort of grating cheese roaming around.

Yield: 6 large pieces of pizza
Active Time: 5 minutes plus time to thaw broccoli
Bake Time: 12 minutes (or whatever the boxed instructions indicate)

Ingredients

1 (10 ounce) bag frozen broccoli florets, thawed
1/2 teaspoon minced garlic
2 tablespoons extra virgin olive oil
1 frozen vegetarian pizza (16-20 ounces)
1/2-3/4 cup grated Parmesan or romano cheese
Red pepper flakes

Directions

1. Toss thawed broccoli with garlic and olive oil.
2. Arrange broccoli over frozen pizza and evenly sprinkle with grated cheese.
3. Follow directions on the back of pizza box. Pass the red-pepper flakes.

Thanks for the comment, Peter. Don't think it would be very good w/processed cheese; I used, per recipe above, grated Romano. I alway grate my cheese as needed at the last minute for better flavor, but I understand the time constraints for many don't allow that. Peggy
