I'm not immune to the temptations of the frozen food section at the grocery store. Having a frozen meal to turn to on a chaotic day can be a God-send. I just look for the most nutritious options, and (thankfully) there are healthier options to choose from these days, frozen pizza being no exception.

I generally have a box of Amy's organic pizza in my freezer. And no, I'm not on Amy's payroll nor do I receive click commissions.

I simply appreciate that Amy's pizza crust is made from organic unbleached wheat flour, the pizza does not contain any bioengineered ingredients, yada yada yada.

Nevertheless, I can't leave well-enough alone, especially when it involves baking frozen pizza, so I always doctor-up my frozen pizzas. In addition to, or instead of, the ingredients below, I imagine sliced tomatoes, peppers, roasted garlic, onions, salamis and mushrooms would also be savory add-ons.

Yield: 1 medium-sized pizza (4 slices)
Cost: apx. $9.00
Time: 20 minutes

Ingredients

1 (14 ounce) Amy's Organic Spinach and Tomato Pizza
3 artichoke hearts*, sliced
1 cup chopped fresh spinach, washed and spun dry
1 teaspoon extra virgin olive oil plus extra for brushing around crust
2 tablespoons chopped fresh basil
1/2 cup crumbled feta
Parmigiano-Reggiano
Red pepper flakes, optional

*I enjoy the Trader Joe's bottled artichoke hearts with stem ($2.99, 14.6 ounces)

Directions

1. Preheat oven to 425Ëš.
2. Remove pizza from overwrap and place directly on middle oven rack.
3. Bake for 8-9 minutes. While pizza is baking, combine chopped spinach with 1 teaspoon olive oil.
4. Remove pizza from oven and decorate with sliced artichoke hearts then evenly sprinkle spinach,basil and feta over pizza. Brush crust edges with extra virgin olive oil then evenly sprinkle grated Parmesan over pizza.
4. Return to oven and bake an additional 2-3 minutes or until feta has just begun to melt. Sprinkle with red pepper flakes, if desired, and serve.
