Meatloaf Sandwich

Are you reading this blog while contemplating what to have for lunch? You wouldn't be wondering if you made meatloaf for last night's dinner! I often make meatloaf expressly for meatloaf sandwiches. They epitomize comfort food and are just right for a brown-bag lunch in February.

Making meatloaf sandwiches, for me, includes purchasing a loaf of Zingerman's challah bread. If you enjoy a pillowy bite, echoing the comfort and sweetness of this ketchupy glaze, I'd definitely recommend sandwiching the meatloaf in challah.

Almost anything is good sandwiched in a Zingerman's Paesano Roll, however, and change is good. Zingerman's breads are available at Zingerman's and Zingerman's Bake House but you will also find them at Arbor Farms, Whole Foods, Busch's and Downtown Home and Garden.

Yield: 2 large sandwiches Cost: apx. $4.00

Ingredients

1 tablespoon Dijon mustard 1 tablespoon mayonnaise 2 sandwich rolls or 4 thick bread slices, preferably freshly-baked challah 2 large lettuce leaves, washed and spun dry 1 small tomato, sliced 2 thick slices meatloaf

Directions

1. Combine Dijon and mayonnaise and spread over cut sides of bread. 2. Layer 2 slices of bread with lettuce, tomato and meatloaf. Top with remaining bread, cut in half and serve (or wrap for a brown-bag lunch).

Meatloaf sandwiches are great, but they depend on a good meatloaf to start with. Make sure your meat has plenty of fat (20-30%), season it well, and don't overcook it.

One of my favorites. Every time I go on a road trip, I make meatloaf the night before, and meatloaf sandwiches are are my breakfast, lunch, and dinner for the whole trip.

Meatloaf is a great comfort food... and this recipe looks delicious.. thinking I may make it for our Super Bowl party this weekend and serve as sandwiches.. easy to eat. I made this last night! So I do have this for sandwhiches...and a good thing too as I have water aerobics tonight and no time to cook! The meatloaf was great. All the eaters enjoyed. I also baked the "onion" Kuegel that was on yesterdays food page to go with the meatloaf. Excellent. Note: instead of traditional bread crumbs I used panko, I also used 1 lb of dark gr. turkey to the 1 lb of 80/20 grind. I am not a fan of meatloaf ~but I really did enjoy this version.

One of my favorite meals especially knowing a meatloaf sandwich can be lunch the next day. Certainly this is a winter comfort food! I hope to try this recipe soon as I think the addition of carrots and cheese will be a change from my standard meatloaf!
