Rustic Italian Cooking: Pasta with Francesca Gitschlag. 5:30-8:30 p.m. Ann Arbor Whole Foods, 3135 Washtenaw Ave., Ann Arbor, in the Cooking and Lifestyles Classroom. In this course (one in a series of five) a complete rustic Italian meal is prepared featuring a pasta entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing Tagliollini au Gratin (egg pasta baked in a light tomato sauce with veal meatballs and cheese), Baked Zucchini (stuffed with ground meat and herbs, baked, and dressed with fresh basil sauce), Apple and Pecorino Cheese Salad (dressed with lemon vinaigrette) and Strawberry and Mascarpone Cheese Tart, followed by the entire meal enjoyed together family style. $52. Beer: The British Beer Invasion. 6-8:55 p.m. Arbor Brewing Co., 114 E. Washington St., Ann Arbor. If you have limited beer knowledge, "Beer: From Around the World" is recommended but not required as a prerequisite. The British Empire was the largest empire in the history of the world and exerted tremendous influence around the globe, so it's not surprising to discover that it greatly influenced the world of beer. In this class we'll explore and taste our way through the history of brewing in England, Ireland and Scotland. Putting out a tray of these at a party is your way of saying “the cookie is king.” They’ll walk you through every step of making these regal, head turning, mouth-watering traditional Jewish desserts. But often the dilemma is in deciding what to serve and how to prep your food choice for grilling. Let "seasoned" culinary instructor, Francesca, come to the rescue with a variety of sauces, marinades and rubs that can be used with chicken, pork, lamb, fish, beef and vegetables.
