Seva revamps menu, offers more gluten-free options

“We had a lot of customer feedback and lots of great ideas from the staff,” says restaurant manager Hope Mleczko. “In addition to expanding our gluten-free offerings, we also removed items that weren’t selling well—such as half-sandwiches—and consolidated other things, like our large and small salads into one medium-sized plate.”
Favorites like the Enchiladas Calabaza and Yam Fries remain, though Mleczko explains that the kitchen has switched to a different supplier for their yams, which previously were coated in flour and, as a result, “contaminating” all the other foods that shared the same deep fryer.
“Some of our customers can be that sensitive to gluten,” she says.
The gluten-free menu features 6 appetizers—including the new, improved Yam Fries—4 entrees, 8 salads, 12 sides, and options for “Make-Your-Own” omelettes and rancheros breakfast dishes. There’s even a gluten-free Chocolate Almond Cake available for dessert.
"We're still looking for a delicious gluten-free bread," says Mleczko. "It's sort of like the unicorn of the food world, but we're working on it."
According to Mleczko, the new menu, including the gluten-free choices, has already garnered plenty of praise.
Those requiring gluten-free diets include people with wheat allergies or celiac disease, a genetic disorder that affects 1 in 100 Americans according to some estimates.
